Friday evening I went spray tanning, and then to Walmart. Go ahead. Laugh. I'm completely okay with that. I had a huge list of things I needed to buy, and groceries for upcoming dinners and such. I took my time, I used my coupons and I walked out of there with more than I needed for less than I ever could have imagined. Yay!
TEN worked late Friday night, and by the time I got home it was almost 9pm. BUT...we were both starved! I invited him over to make Gina's Chicken and White Bean Enchiladas with Creamy Salsa Verde.

Saturday we woke up to a horrendous storm. Absolutely horrendous! Downright scary, actually. Saturday, April 16 was The Real Housewife of Delaware's birthday. I set off to head to TRHoD's hometown, 45 minutes away, but I couldn't see through the rain. AND...the road at the bottom of my neighborhood was washed out. EGADS!
TEN suggested I wait for a bit to see if the storm let up, and sadly...it didn't. Not until much later, but by then TRHoD's mom had lost power and they were having a major hail storm!!! We decided that it must be a sign from God that I shouldn't travel on Saturday. As sad as I was not to be with TRHoD on her birthday, sometimes you just have to obey the signs.
Barbie called to ask if TEN and I would like to come over Saturday night for supper & games. Just the 4 of us. We thought it sounded like a lovely idea, and gladly accepted the invitation. It was while I was on the phone with Barbie that I noticed this:
Did I tell you about my Salsa Garden? I purchased it a few weeks ago. I planted tomatoes, cilantro & cayenne pepper. It has started to sprout. Watch out friends, I'm going to be making salsa in no time!

Sunday I decided to make Louis some Sweet Potato Treats. I saw this recipe on the blog I am Santa, a Miniature Schnauzer. Diana found it on Oscar's blog. Clearly the recipe has been passed around, so it must be good :) Diana made her potato slices like this:
They look like french fries, and I thought they would be the perfect size for a little treat for Louis.

It was a glorious day outside, and Louis was full of energy. TEN and I decided that it was the perfect day to take Louis on a hike!

He wasn't 100% sure what he thinks about the hammock. The fact that he can only walk on ME, and not on the hammock was very confusing to him. I have faith. He will figure it all out the next time :)
I'm on a Gina's Skinny Recipes kick (if you couldn't tell!), and Sunday night I wanted to make her Greek Turkey Meatballs with her Skinny Tzatziki sauce. I have to say, this was one of my favorites so far. It was absolutely delish!
(each meatball is 1/4 cup size, so we made them in the 1/4 cup measuring cup...more like little patties)
(Louis was exhausted from our hike, but couldn't be far from the food...)

(we decided to eat the turkey meatballs and tzatziki sauce more like a souvlaki. i put the low carb tortillas in a frying pan and heated them until they were a bit hard, much like pita bread)

And THAT was my weekend!
Tonight I'm heading to my FAVORITE restaurant in Smalltown, VA to celebrate Babbo Natale! Her birthday was on Friday, but she was out of town so we didn't get to celebrate. Some of her girls are getting together to celebrate her tonight, and I see a Filet Oscar in my future :)

I have made those meatballs before and they are good but Brad prefers the Aisan ones.
I've never made her enchiladas but they look good too.

And super weird - I had never heard of tzatziki sauce before until yesterday when Kevin picked it up at trader joes. Then you talked about it today. Random!
